Ingredients:

  • 2 Cups of flour
  • 3/4 Cup of water
  • 1/4 Cup of oil
  • 2 Teaspoons of baking powder
  • 1/2 Teaspoon of salt

Instructions:

  1. Mix the flour, baking powder and salt in a bowl.
  2. Add the oil and water to the dry ingredients and stir until a dough forms.
  3. Knead the dough for several minutes until it becomes smooth and elastic.
  4. Divide the dough into several small balls.
  5. Flatten each ball of dough into a thin circle.
  6. Cook each bannock on a hot, greased skillet or a griddle for several minutes on each side until it turns golden brown.
  7. Serve the bannock warm.

Damper bread recipe

Damper bread is traditionally made by Australian bushmen over an open fire, but the recipe below can be made at home and in a conventional oven.

Ingredients:

  • 4 Cups of self-rising flour
  • 1 Cup of milk
  • 1/2 Cup of water
  • 1/4 Cup of butter, chilled and cut into small cubes
  • 1/4 Cup of sugar

Instructions:

  1. Preheat the oven to 375 F (190 C).
  2. Get a large bowl and mix the flour, sugar and chilled butter using your fingertips until the mixture becomes crumbly.
  3. Make a well in the center of the mixture and slowly add the milk and water.
  4. Stir the mixture with a wooden spoon until a dough forms.
  5. Place the dough on a floured surface and knead it lightly until it becomes smooth.
  6. Shape the dough into a round loaf and place it on a greased baking sheet.
  7. Get a sharp knife and make a cross-shaped cut on the top of the loaf.
  8. Bake the bread for about 40 to 45 minutes or until it turns golden brown.
  9. Set the bread aside. Let it cool before slicing and serving.

Flatbread recipe

  • 3 Cups of flour
  • 1 Cup of water
  • 1 Teaspoon of salt

Instructions:

  1. Preheat the oven to 375 F (190 C).
  2. Mix the flour and salt in a bowl.
  3. Gradually add the water and stir until a dough forms.
  4. Knead the dough for at least 10 minutes until it becomes smooth and elastic.
  5. Roll the dough out to a thickness of at least 1/2 inch (1.3 cm).
  6. Cut the dough into small squares or circles at least 3 inches (7.6 cm) in size.
  7. Use a fork to poke several holes in each piece of dough.
  8. Place the dough on a baking sheet and bake for 30 minutes or until they turn hard and dry.
  9. Store the hardtack in an airtight container in a cool, dry place.
